Groot Constantia Chardonnay 1996

The blend of wooded wine resulted in the fruity, complex wine with subtle wood and toast flavours. The wine shows typical colour of wood maturation, but is a definite move away from the older style of over wooded Chardonnay with no fruit to back it.

about the harvest: Grapes were picked in February of 1996.

in the cellar : It is 75% tank fermented and 25% wood fermented and then kept on the lees for eight months. Malolactic fermentation in wood - 15%. The wine should be enjoyed young, but the intensity of the small crop ensures that limited maturation will add further dimension to this wine.
