Rupert & Rothschild Baron Edmond 2019

This red Bordeaux blend has expressive aromas of juicy blackberries and plum with hints of pencil shaving nuances. A plush palate with intricate tannins supported by liquorice, cherries with a lingering oak spice finish.

This wine will pair well with a springbok shank, celeriac puree and grilled leeks, complimented by a warm spiced blueberry glaze.

about the harvest: The grapes were hand-picked from mid-February through to March 2019. Due to limited rainfall during the winter season, berries were smaller allowing for natural concentration of tannins, colour, and flavour.

in the cellar : Berries, sorted by means of an optic sorter to ensure excellent colour density, fermented in stainless steel, followed by extended skin contact, with regular pump overs for gentle extraction of colour and flavour from the skins. Thereafter selected tanks completed malolactic fermentation in new barrel and the remaining in stainless steel, followed by maturation in barrel. Matured for 18 months in 225L French oak barrels of which 54% was new wood and the remainder second and third fill barrels.
